The new SantoWines winery was established in 1992, along with the Wine Tourism center located in the caldera of Santorini, with stunning views of the volcano. The Union of Santorini Cooperatives, as SantoWines is named, is currently the largest producer of wine on the island, with about 2,500 members. For the people of the Union of Santorini Cooperatives, winemaking has been an art for 3500 years. Assyrtiko is the most popular white variety, representing 80% of all the grape varieties on the island and providing full-bodied wines with high acidity and a distinctive aroma. From the Assyrtiko variety, winemakers produce not only great dry white wines, but also the Vinsanto, the famous sweet wine made from sun-dried grapes. At the SantoWines wine tourism center, visitors have the opportunity to tour the facilities and then enjoy a fine Vinsanto along with a wonderful view of the unique sunset of Santorini.
